Goes back way over a century, and has evolved from the old tradition, where a demon sets a maid impossible tasks and whether she fails or not will determine if she falls into his clutches. Child believed this to be an interloper from an earlier ballad 'Lady Isobel and the Elfin Knight' (There are many related songs, The Two Magicians is another well known one, or 'Broomfield Hill',again both with many versions.) The 'Parsley, sage rosemary and thyme' refrain contains herbs with magical significance used in spells and to counter spells.

There are many versions of the song, as many as there are singers. However, the version that Paul Simon sings is precicely Martin Carthy's interpretation put together from a number of different versions. The version I sing has more verses and a slightly different tune.

No-one wrote it, It's both Traditional and Anonymous,it just sort of evolved, one thing you can say with certainty though Paul Simon didn't!
